First 2parts red onions (for the sweetness)then 3 parts any other onions ,2 cloves garlic ,(Optional).
soften in olive oil or butter, add 2 of your favourite stock cubes or stock you have frozen ,
1litre water or stock,
salt and pepper and if you have it a little or a lot ground chili flakes ,
simmer for 1-2 hours ,
taste and adjust seasoning as you like,
crouton's with grated cheese as you like, mine are with pre grated 4 cheese mix and toasted baguette.

hope this helps. ;)

ohh forgot the bayleaf,soorryy

Made it once years ago. Gonna try that again though. Sounds lush.

We had the rest of the home made singapore vermicelli noodles tonight. WOW. Delia's recipe if anyone is interested. Make sure you use rice noodles.

NOM NOM NOM NOM NOM!

Remember to ensure the onions and garlic don't burn - let them relax and sweat really slowly. This works better with butter. The flavours will be very sweet, as opposed to bitter if they burn.

Once they're really soft and the smell is driving you mad with hunger (it's the amino acids), add a sprinkle of brown sugar and let the onions slowly caramelise.

The sweating and caramelising should take around 15 minutes. You can do faster but the flavour will start to suffer - slower is better with onions.

You can then make it into whatever you want, whether French Onion Soup, Bolognese Sauce or Tuna Lasagna.

I have just finished a breakfast of home-made chorizo and chopped bacon fried and mixed into scrambled egg.

It was unbelievably tasty.

Yeah, it wasn't made into sausages, just the mix that goes in them. It also has the advantage that it keeps for 2-3 weeks in the fridge, which is really good. I'll see if I can find the recipe that the Wench uses if people want it (and it really is awesome, especially in pasta sauces).
