Random question 1: Do all Mac keyboards have Function keys?
Random question 2: Do the function keys work by pressing them or is it by key combo? eg command-F5 to get F5 to work?

Yes. At least all the ones they currently make do. And most of the ones I remember from the past.

Depends what you've got things set to. Most of the function keys also serve another function, like 'next track' or 'bring up mission control'. You can either set them to do that by default in which case you have to hold the 'fn' key to get them to be F8 or F4 or whatever, or you can set them the reverse (i.e. you get function keys by default and have to hold 'fn' to get media functions etc).
