Eggs are dairy products because:
they are products that come from an animal that is not meat
before refrigerators were invented, eggs, milk and cheese were kept in a dairy, a cool room/shelf for dairy products.

Which would all be grand if in fact eggs were classified as dairy products. Which they aren't.

I thought dairy products had to be "secreted" and given that butter, cream and cheese are derived from milk, they were considered dairy?
Besides, unlike milk/cheese/butter that needs to be refrigerated (and not just kept in a cool dry place), whereas eggs can be left out without spoiling.

Cheese doesn't need to be refrigerated, in fact some of them shouldn't be.

Also, why do the eggs you buy at room temperature state that they should be stored in the fridge?

I wouldn't want to risk month old eggs that had been kept warm.
Most things keep fresh longer in the fridge; not just eggs and milk. For example sliced bread in a plastic bag keeps for 10 days in the fridge, but would be rotten in half that time in hot weather.

I've always thought this, but my mum always keeps hers in refrigerated. I think they go kinda starchy, but it does stop them ripening. Mum prefers hers green. Personally, I like them properly ripe.

They emit a gas which hastens the ruining of other fruit, and probably other perishables, hence why it's also a bad place to store them.

None of the eggs I buy can last longer than a month refrigerated or not. Mine last a week and I buy them on a weekly basis.
I'm not a connoiseur of cheese so mine all state I should refrigerate them.
