Working for a Mac developer has shown me the care that Apple have put into their UI, and how much Apple developers care about such things. I can not speak for Windows developers as I have no experience working with any, but the main thrust of Apple’s UI is that all applications should, as far as possible, use the same UI elements for similar things. This means that if you have used one application, then that experience educates your use of the next one, and so on.

This is so true. There is a massive upset in the Mac world if Apple move from brushed metal surround to the window rather than a satin metal. If the Apple shortcut Command + H did not work in a given app. I would be contacting the developer to find out why.

I've learnt two new shortcuts in as many days  And I so seldom use the mouse!

On a Windows keyboard, the F1 button has "HELP!" written on it. It's been standard since before Windows, and I'd be mighty bemused if any "serious" application didn't support it.

Preferably context-sensitive, in which regard Fire Fox Fails...

Cmd+H seems to hide windows. I'd previously only known of Cmd+W to close windows, or Cmd+Q to quit an app.

Hide's the app, not just the window.

Unless the application is from Adobe. Some seriously HIG-busting wrongness goes on in those.
