iPhoto would have come with your Mac, Gimp runs in X11, which is crap, but workable, and my old house mate used to use Picasso...

Not free, but cheap is Photoshop Elements.

There is also Pixelmator, which Simon is keen on. http://www.pixelmator.com/ I think it’s starting to look like it could certainly give Elements a run for its money. It costs a bit, but it’s much cheaper than Elements.

Fairly competent disc burning software - http://burn-osx.sourceforge.net/Pages/English/home.html
VLC, Handbrake, you know about.
The iStat apps are pretty nifty too - http://www.islayer.com/apps/
OnyX is useful to have (kind of a maintenance suite, I have it but I couldn't tell you when I last run it) - http://www.titanium.free.fr/pgs/english.html
For your IM needs, Adium is pretty comprehensive - http://adium.im/
A lot of people swear by CyberDuck for FTP - http://cyberduck.ch/

It's worth having a nose about on http://osx.iusethis.com/ as well. Lots of things, recommended by the folk who use them, which I think must be better than blindly downloading freeware. Of course, you might find a gem.

Don't neglect Preview.
It's actually got some pretty handy tools for colour correcting, cropping and so on. Worth exploring a bit with that and seeing if it'll meet your needs.

Oh, and I hope you enjoy the new shiny. :)

Smashing Magazine just listed 25 free or open source Mac productivity applications.

You might find something of interest in there - Symbol Caddy in particular. ;)

I've also just bought a Macbook Pro...I've got iWork and iLife so far, what other software should I be having on my Mac?

In particular I'm looking at photo and video editing, but all suggestions about apps. I should have are welcome.

Well, you’ll have iMovie. Final Cut Express will probably be your next bet. You can export iMovie projects that Final Cut Express can open.

Adium (nice GAIM/Pidgin client for OS X)
TextMate (costs about €47, it's gone up quite a bit!)
TeXShop (if you plan to use a lot of LaTeX)
Eclipse/Netbeans
Chicken of the VNC (as a VNC client)
Vine server (as a VNC server)
Cyberduck (for FTP)
Flip4Mac (allows WMP files to be played in QuickTime)
VLC
HandBrake (should you wish to rip the film out of a DVD to put on your iPod/etc)
Mactheripper (to backup a whole DVD)
Inkscape
The Gimp
OpenOffice
Transmission (to download those Linux distros from torrent sites)

That isn't just a dump of all my apps, it's what I use on a regular basis, and many of them I got when I first became a Mac user and depended on them before I became happier with the command line (for example, I hardly ever use Cyberduck now)

Mac OS X 10.5 has this kind of thing already built in, and this works well over the internet if you have a .Mac account.
