Discussion at lunch time.

Meat covered by only a top layer of pasty - is it acceptable?
What about the likes of fish pie, cottage pie and shepherd's pie? Pie or not pie?
Or should the filling be encased in pastry?

Define pie.

To paraphrase this girl (clicky), "What is pie?"

I'd had: is open top pie a pie? (quiche etc)
if I picture a pie, it's got pastry top and bottom and a dense meat or cheese filling that holds its shape when cut

Pie should be filling encased in pastry.
Just pastry on the top is just a soup with a lid

I would have said that a quiche is a sort of tart or flan rather than a pie.

Exactly. If it isn't covered in pastry on all sides, it can't contend to be a pie...

On the other hand, a Pasty, for example, isn't a pie in the traditional sense.

Can we be specific and say that a pie has pastry case and a pastry lid? A pasty doesn't (all one piece) and, obviously, flans and arts don't either. And as for anyone who calls pizza a pie...

Quiche is not a pie.
Flan is not a pie.
Shepherd's pie is pie in name only, it is not really a pie.
Similarly for fish pie.

Pie: Lid, sides and base made of shortcrust pastry or hot water pastry and then baked
Pudding: Lid, sides and base made of suet pastry and then steamed/boiled
Tart: Sides and base made of shortcrust pastry then baked
Flan: Base (and, optionally, sides) made of sponge then baked
Topper: Lid made of shortcrust pastry then baked
Cobbler: Lid made of cobble then baked

Quiche is a tart and therefore not pie
Flan is a flan and therefore not pie
Shepherd's pie is definitely not pie
Cottage pie is not a pie
Fish pie is not a pie
Pied flycatcher is not a pie

Puff pastry is [LIFTED] and anything made from it is neither edible nor pie.
Filo pastry is for starters and desserts
Choux pastry is for profiteroles
