Well, the sandwiches are a success today :D

Took one out of the freezer on the way out today and it's still freash and tastes just as good.

And it isn't soggy either :D

Added bonus with the frozen sandwiches.

It kept my fruit chilled in the box so I now have a nice cold, crisp apple :D

Speaking of sandwiches, I am currently eating a peanut butter and smokey bacon crisps sandwich. Very nice!

Well I bought my ingredients without the foreknowledge that I was going to be freezing them.

In the end I made Havarti (sp?) cheese, deli honey roast ham and spring onions in a wholemeal roll.

The trick is in the method of preparing them. As this was a trial run I wasn't very adventurous.

Butter both bits of bread to stop absorption of any water.
Slice of cheese, bit of ham and a few bits of sliced spring onion.

Double wrap in tin foil and into the freezer.

Things that freeze well are...
    Ham, chicken, any sandwich meat including sandwich filling paste things.
    Cheese.
    Fish (Tuna mayo, salmon, etc...)
    Low water content veg (Avocado, peppers, spring onions etc...)
    Peanut butter and jam (this seems to be a popular lunchtime sandwich in America)

Things that don't freeze well...
    Eggs
    Oil based dressings
    High water content veg (tomatoes, lettuce, etc...)

A few tips I've read...

If you want salad take it to work in a box and add it to the sandwich at lunchtime.
You can use sauces like mayo, mustard, ketchup and salad cream but they are best placed between the filling rather than next to the bread. Or you can butter the bread before putting the sauce on. (This is to stop the bread going soggy)

Another good tip is to make the sanwiches on already frozen bread before freezing the sanwich in a sandwich bag.
Also, for storing in the freezer you need to double wrap them. Either 2 layers of tin foil or a freezer bag with tinfoil around it or a sealed sandwich bag inside another bag (maybe a big bag to hold them all).

And if you make a lot of different varieties then label them all.
