planescape: torment fallout [1/2/3]... inon zur and mark morgan have different styles but i like them both some of the decent 1/2/3 sountracks were good... others did my head in [mainly the skinny puppy stuff for descent 2] Half Life [and the hl2 rehashes] it's hard to pick a favourite... it's worth pointing out [this]... might post it in a thread of it's own...

I had the same immediate thought - Yuzo Koshiro was a bit of a legend in my Megadrive days. Streets of Rage 1 & 2 had great soundtracks. But Vice City had the best collection of 80's songs! I used to turn to Emotion 98.3 as soon as I got into a car! Good ol' Fernando Martinez! "She was like a big fat cow, all walking on two legs and stuff" ! Although, I'm going to nominate Quake - soooo creepy!

Final fantasy, can't remember if it's VII or VIII but the one with all the synth - absolutely brilliant!

GTA: Vice City
Half Life 1 (you wouldn't listen to it in the car; but its' minimalistic ambience, inter spliced with the tension filled onslaughts that garnish the set pieces were a landmark moment in video game audio.)

The music at the end of Mario Land on the Game Boy It took me years to finish that game and now I can do it in about 45 mins The end game music is brilliant though! Plus, when you have completed it you can play through the game again but it has more enemies in it. I managed to complete it twice and got even more enemies!

It has to be OUTCAST.
The high-quality orchestral score was composed by Lennie Moore and performed by the Moscow Symphony Orchestra and choir.
Absolutely stunning.

Did my dissertation on music in computer games, so went through a HELL of a lot of soundtracks!
Personally I love The Witcher's soundtrack. Brilliant through and through.
Also Guild Wars is surprisingly good quality.
Halo's soundtracks are pretty good, but a little bit too... Environmental. The themes are awesome.
Surprisingly Silkroad Online has an amazing soundtrack! One of my favorites.
I like the Final Fantasy series but they get a bit repetitive - You can hear elements of the previous games in all the soundtracks.

if memory serves they were all done by the same guy [Nobuo Uematsu] so it's not that surprising...
